Would it be possible to hack this to make a custom pet?

There's no interface for that, but if you are a hacker and an electronics engineer, maybe you could create one.

Once you get all 15 pets, is there a way to reset the toy to start over from the beginning again?

Yes you can reset it and start over from the beginning using the settings menu :)

How can I choose which pet I want before checkout?

all Bitzees are the same and come with all 15 pets which you collect through game play.

Is it necessary to buy a protective case? Or is the toy pretty durable?

The toy has good resistance, but if you can buy protection it will definitely be better.
