It may be too big to use for running my Starlink coax cable, also afixing using Wire Rope Cable Clip Clamps, but it works right?

It's 1/4" thick, so it will last decades. I use it as a messenger wire for my cat6 cables. The included 4 clamps shown in the product picture are adequate. Just put the live end on the saddle, not the dead end. Also give it enough slack in the summer, as the winter cold is going to shrink it and puts too much tension on the ends. Use turnbuckles to tighten when you install it, if you are not able to tighten it adequately manually. My max is 100 ft for tightening by hand.

Would it work better to use a 1/8" cable for running inconjunction with a WiFi connection wire through the air to my Starlink retangular dish?

If a big tree branch falls on an 1/8", the cable is going to snap. 1/4"'s ends might loosen but the cable itself is unlikely to snap.
