The sizzling plate is cast iron...it does pull some of the varnish off the wooden platter but not a lot...I would definitely recommend and I’d buy again

Q: Does this work with induction hobs?

I don't know - But on 'googling' cast iron & induction hobs it would seem so.

Q: Can I use a knife in this if I use it to eat from or will it ruin it?

I should think you can but a sharp one will soon blunt on the material. Having really only cooked for myself I prefer to use a flat steel spatula to take the contents from the pan to a plate or a burger/sausages to a bun
