These are wooden lacquered and the have little grooves in the bottom for gripping food better

Yes they are, I carry them everyday in my purse.

how do these chopsticks handle noodle soups like ramen, soba, or udon?

They handle ramen fine, I haven't tried the others myself. But it all depends on the cook time and your willingness to wash them after. If the noodle are over cooked and a bit mushy, the chopsticks will cut right through them. If they're too hard you're likely to get more gunk than you planned on into the chopsticks.
