Is it possible to swap out the stick and buttons for sanwa parts?

Easily. I swapped the buttons out and although I've only changed the joystick topper and not the entire joystick, I've taken the joystick out several times to make the whole thing take up less space in my backpack. Like even if it's your first time it will probably take you less than an hour. Check out JoyStickNY on YT. He's got mod videos for this stick specifically.

How long is the cord?

90" (7.5 feet) according to the manual. I use mine with a 3.0 USB extension sometimes and it works fine.

will this work on xbox series x?

It is not compatible with xbox.
