Can you calibrate this thermometer?

Yes you can. The nut on the bottom of the dial adjusts the needle to the correct temp. Google how to calibrate a meat thermometer for the best method.

Can this thermometer be used to determine melted wax temperature?

If you dip it in the melted wax I don't know why not. (Of course, then you've got the job of cleaning the wax off.) Read it while it is in the wax, just as you would read it dipping it in any hot liquid.

Does thermometer need to be at 0 before checking hot water? Don’t come with instructions and when putting into ice water, reads 40 not 0?

Not to my knowledge - just put it in to the water you want take the temperature of. You must be assuming Centigrade measures... in Fahrenheit 32 degrees is freezing; so unfrozen water, say with ice cubes added, measuring 40 degrees F. would make sense - about 8 degrees above freezing.
