Great for making bread!
An excellent product that does exactly what it's supposed to do: it makes light, fluffy, chewy bread. I'm very happy with the product.A note, however, if you have any questions about Arrowhead Mills' products, don't bother emailing. I went back and forth with their customer service department trying to get some info on this (regarding allergens and labeling) before I bought it. It was like pulling teeth. And the info I received ended up being wrong. It was inconsistent with the labeling I saw on the Arrowhead Mills flours I saw at the grocery store. So I ended up calling.The woman who worked the customer service phones was very helpful, friendly and gave me accurate information. I'm glad I called. This vital wheat gluten is great.Just don't waste your time emailing them.(And the gluten is labeled as having wheat as the only allergen, with no cross contamination issues, for those who need to know that.)

Not Organic
Sorry to burst the rating numbers. I'm giving it a 3 just because it's an Arrowhead Mills product.Very frustrating, as it's rather hard to find Organic VWG.And here I thought that Amazon.com did not make these sort of mistakes.

fresh and flavorful
I use a lot of this stuff for making seitan, since my husband and I are vegan. I wasn't happy with the Hodgson Mills version when I tried it a few years ago because it went rancid in the UNOPENED box so quickly (perhaps other people use it up faster than I do, or they don't buy it in such a large amount at a time). This stuff keeps well in its unopened box, as long as I refrigerate or freeze it. It also has a good flavor, and makes a nice tender chewy seitan if you use a pressure cooker.

Great product
Easy to use. 10 oz is perfect amount to make in one batch. No measuring of gluten required. Makes very good seitan. We eat a lot of seitan, Package is not the blue box sold in supermarkets, but brown & tan bags, which are moisture/humidity proof which is great in a humid environment.Great product. The 12 pack is the best value we have seen.

Very nice gluten flour
Purchased to try using in making 100% whole wheat bread. I am pleased with the result of this flour in baking bread. I like the way it is packaged, with several packets in each box, thus keeping the as yet unused packets fresh.

Great for making seitan
As a veggie household, we try to come up with faux meat-like-products for certain dishes ... primarily things that were comfort foods growing up, but converted to be no-meat. Seitan is a nice faux meat ... similar texture to excellently-cooked pork butt.The Arrowhead Mills vital wheat gluten is the primary ingredient in seitan, and it works nicely. I wish I could get it in bulk for a reasonable price, but for now, this works, and we recycle the boxes.

Vital Wheat Gluten
I like Arrowhead Mills Vital Wheat Gluten better then other brands. The town I live in has a big community of gluten free fanatics and therefore VWG is hard to find. The only brand around here is Bob's and I find it doesn't make good seitan products as Arrowhead Mills brand. So I ordered this online. I liked the price I paid. I recommend for making Seitan..
