Good but pricey
This was much more than I would usually spend on potato starch, but it performed excellently.I velveted some chicken and then seasoned and did a light dusting of the potato starch before pan frying. They came out with a super thin golden crispy surface, and were still moist and tender on the inside. The bags do come with a resealable top, but because they are in that crinkly type of plastic that I am always afraid will end up getting punctured, I opted to transfer into my own airtight container.Great option for gluten-free folks.

Fine powder to thicken or bread
This Maeharaseihun Japanese Food Potato Starch is a very fine white powder. The bags are resealable and contain 200 grams each. The per ounce price is much higher than other potato starches, even other Hokkaido potatoes. I can't say what makes this one worth the higher price. It seems excessive. Also, there's minimal English information on the bag. If you scan the code at the bottom right on the front of the bag, your phone can translate the available information about the product. We tried the potato starch as a coating on pressed, cubed, and marinated firm tofu. We air fried it for about 15 minutes at 375F. It came out beautifully. It's a nice, light and crispy breading. I like that it's gluten free. I'm likely to mix it with another flour (corn or quinoa) next time. It's also useful for thickening sauces. Recommend!
