How does that little pin fit in the hole on the door jamb? Mine has a hole big enough for the latch which is much bigger than the small pin.

Because the plastic is so stiff, it tries to keep the door open but the little pin catches on the hole on the door jam. It honestly works great and I'd recommend it. I've ever bought them for my son.

Can two be hooked together to create a longer latch?

They are not designed to link together. If trying to use anything as an extender, you would need for it to create the same tension so it does not become disengaged from the door latch.
