Shun Kanso 6.5" Hollow Ground Nakiri Knife

The first thing I do when I get a knife out of the box is see can I shave with it and the answer is yes. Light weight and versatile a great add to the collection. With many Japanese sets you have to add knives from different manufactures to complete a full set. This is true with Shun and Sasaki but there is a reason. If you check the rating on the ratings knives they are higher by the other manufacturer. But not this one. This is a wonderful product, I like Saskuki Masters and Artisan also. But I do have also the Master's series for my small six inch chef knives. Expect to pay 1,000 by the time you put everything together, no worries the whole set actually costs 3,000 which is a 2,000 savings

Fantastic chopping knife for vegetables, fruit, nuts, etc. Perfect size without being too large (butcher) or too small to get the job done. It is a pleasure to do the work because the knife does the work effortlessly.

Sharp, great knife for the money

I have most of the Kanso collection, they're amazing. The nakiri works like a dream.I like the style of the kanso knives, they are really unique looking and are really nice quality. I enjoy using them, even my SO likes using them and he really isn't interested in cooking and food prep but he likes chopping stuff with these.

I have researched vegetable cleavers for a long time, and settled on this one, my first Shun knife. It arrived right before I started making a salad, so I was able to wash and test it right away. I had some pretty sad tomatoes, which are kind of the perfect test for sharpness. The Shun did not do great, mushing the tomatoes.To compare, I used my old Mac santoku. I had recently sharpened it, but only with a Horl rolling sharpener - I am no expert. The Mac slid through the almost overripe tomatoes easily.Its a nice knife, but the Shun is the first knife I have ever bought that seemed not super sharp out of the box.

Edit: after a year or two, I love this knife. The handle is still sub-par, but overall this is my favorite knife.Knife is sharp and weighty, but the quality of the handle does not do the rest of the knife justice. It feels like a cheap wooden handle from a dollar store knife. Shun classic pro is a million times better.

I really love this knife. I invested in some lower quality kitchen knives that really didn't hold up. The quality of the blade and the durability of the handle are impressive.

This is a great addition to our kitchen knives. Super sharp. Great value for the price.

I'm a fan of the Shun knives and owned one before purchasing this one. Great utility and comfortable grip for someone with smaller hands. It holds an edge for longer than my other basic knives.

Wow cuts perfectly, vegies etc very fine requires care, very sharp straight out the box.

This was a gift for my son who likes to cook :) I was just completing his set. He loves them!

Beautiful knife, incredibly sharp. Slices right through tough fruits and vegetables.
