How is the stability when you only habe one guitar on it? How about the stability on carpet?

It's fine with one guitar on it. As for carpet, I wrote to them asking about better stability on carpet. I was told, "if you purchase higher rubber feet for the stand and swap them out with those already on the base, this will enable you to increase the stability on soft surfaces :)" I've been procrastinating on doing that, but it makes sense to me. I'll also add that they're support is excellent.

Are the hangers really adjustable? Why do the pics then show acoustic guitars hanging from their tuners?

Regarding adjustment of the hangers, you can adjust them around 3/4" towards (or away from) the stand. They are 'U' hangers like most stands. I bought mine because the gorgeous wood used fits my living room decor well. Also, I can hang a guitar on one side, and a soprano ukelele on the other, and it stays perfectly balanced.
