They have a great flavor and keep the shape when fully cooked. Great for salads and cooked. I cook them together with rice — put enough water in the pot for both rice and lentils. Cook lentils about 6 minutes and then add the basmati rice, which cooks in 20 minutes.

After reading “Grain by Grain” by Bob Quinn, I sought out the Timeless website, because his story of sustainable farming in the Montana drylands touched my heart. I have used Puy lentils from France in my cooking for years and bought these as an alternative. They are every bit as good as the French grown. Also, I needed to defer my shipment for a few weeks, so called and requested that service - they were happy to accommodate me and shipped right when they said they would. All in all, A+

Bought these for a specific recipe. These are smaller than the readily available brown lentils but they don’t turn to “mush”. Delicious little jewels

While it is a little pricey but it is a tasty once in awhile dish. I followed a recipie from NYT and was pleasantly surprised with the outcome. Light texture and healthy.

These are delicious, high quality Organic French Green lentils. They are perfect for soups because they hold their shape well.Whole Foods stopped carrying them (and all other French Green Lentils, not sure why) so now I order these through Amazon.
