Made Valencian Paella with this pan and came out perfect. Heats evenly, cooks great, and works perfectly if you are hoping to get the coveted Socarrat. Love this pan, makes me want to throw more parties just to show it off. Pricey yes, but will last your lifetime and an heirloom to hand down. America has enough trash, buy something that will last!Take care of it, wash by hand, dry it thoroughly after cleaning and it will last. If that is too hard to understand, buy the $25 pan. The bad reviews are people who watch too much reality cooking shows and think they are chefs because they bought a chef jacket or a toque. Good pans and knifes are family members, treat them well, give love not laziness.

This paella pan was better than I imagined; I knew I was putting down ~170 USD and had high expectations because It's not cheap. What an amazing cooking experience! It was easily as consistent as advertised; simmering of the broth uniform across entire surface! Socarrat salió fenomenal! Super easy to clean! Beautiful pan! This review is for the 18 inch version of the Sertodo Copper Alicante Paella Pan. I bought this pan this Fall and took it with me on a road trip out to Venice California, where my good friend was sharing a house with an up and coming natural foods chef and lifestyle consultant. As a thank you gesture to them for letting me stay, I threw a little paella party and whipped out this gorgeous show stopper of a pan. As previous reviewers have mentioned, it not only performed well in cooking, but it also served as a beautiful part of the party decoration before and after the actual meal preparation. The hand-hammered construction gives this pan a unique look and feel over the machine stamped stuff you see around. Also, the finish quality and details, like the stainless steel handles, are superb. We took advantage of the bountiful selection of squid, mussels, shrimp, and fish available in southern California and cooked up an excellent seafood paella that was a big hit. The paella came out delicious, but the pan itself was the talk of the night. Oh, and also in terms of capacity, we had 10 people at the party. Everyone ate their fill and could have eaten again if they wanted, so this is the one you want for a group of 20.

Excellent heat distribution. Makes a great paella on a 22” Weber grill. Feeds 15-20 servings.

I credit Sertodo and Amazon for my copper addiction. If you are looking for a top shelf paella pan, there is no way you can go wrong with this product. Unlike a lot of the other products out there, this pan is hand made and being so, the slight imperfections make it even more awesome. I have all three sizes and beyond using them for paella they are great for serving, cooking other items, etc.But, the 15" is truly the king. We cook with it outside on our weber charcoal grill and it's PERFECT. It makes for a super cool, social, experience.Is it pricey. YUP. Nice things are. But if you can swing it...totally go for it!

To clean I purchase a Dremel Versa Cleaning Tool with a brush and some dish soap.

The expensive pan came with manufacturers defect, tried to work with the seller to avoid wasting time by repacking and sending back, one guy said they will give a discount, another said they do not give a discount --repack and send for round or replacement. My thing is that this is an expensive item, why could not they simply check before shipping and have some quality control instead of waiting customer time? Or honor their word? Amazon is also not doing much to address my concern.In anywise, the item is over-priced.

Simmering the rabbit and chicken as I type this! What a lovely pan simply to look at. Once on the burner, it’s quality is such that the meats hardly stick to it, which is a testament in its own right. The handles too, are quite resistant to heat, which is another sign of a good quality pan.Very happy with it thus far.
