The Beautiful Pig selects the finest, most sustainable and healthiest ingredients available in the Pacific Northwest. The humanely raised pork is sourced from Carlton Farms, in Carlton Oregon, free of growth agents/antibiotics and processed entirely by hand. The salts for curing are hand harvested, organic, propane residue free and sourced using socially equitable methods by the James Beard Award Winning salt expert Mark Bitterman, in Portland. The herbs are curated by and sourced from Buck's Fifth Avenue Culinary Exotica, the leading herb and spice purveyor in the Washington Area. Wines from the region in which salami was invented are combined with bespoke ingredients to produce the most incredible cured meats imaginable. All food is reliant on the ingredients that go into it and the care that is taken in preparing it.
