Will this work with a 26 quart mop bucket?

If it's a metal bucket, it will work no problem. If it's a plastic bucket, it depends how thick the sides are. This is a heavy wringer unit, weighing almost 15 pounds so it will collapse a thin mop bucket it no time.

How wide is the opening to hang on the bucket? Wondering if it will fit on a large rubbermaid bucket.

I can confirm it fits a Home Depot Homer bucket quite well.

does this fit a 5 gallon bucket

It will fit in a 5 gallon bucket but deforms it slightly. It is easy to activate the wringer and will not be a problem however the wringer is quite large and heavy and you will not be able to move the bucket by the handle due to the wringer being in the way.

Can you adjust it to wring out more water?

It is not adjustable. However, since I use this to wring out clothes, I readjust the clothes to make the pile thicker.
