I’ve seen this kind of knife in videos, but never had one before
I’ve been watching a lot of cooking videos on Youtube lately, primarily BBQ and meat. I’ve always enjoyed beef brisket, but I felt I needed a bit more “vicarious expertise” before I attempted it myself. One of my hesitations has been cutting the meat when it’s done. My experience has primarily been with corned beef; and I’ve always struggled with the slicing.In almost every video, I’ve seen this type of long, narrow blade that reminded me of a serrated bread knife; but it was obvious this was a different beast. But it sure seemed to work good on video; so I broke down and bought this knife. From the moment I unpacked it, I was amazed by the quality. First, it comes in a nice box. I doubt I would ever use it for storage, but it sure makes a great first impression.Second the knife is a piece of art. It has just the right heft and balance; and the blade, while long and thin, is remarkably stiff and doesn’t bend under cutting pressure. It is quite sharp, and has the hollow ground indents that seem to be on all high-quality knives these days. It cuts through meats like a breeze; allowing for those thin, angled cuts that make for great presentation. It is unlike any other knife I have ever used for this purpose, and now I don’t know how I got along without it.You can spend over $100 for a knife like this; and there may well be a reason to pay the difference. But for me, right now, this knife does just what I want and expect; and it does it for a remarkable price,I am incredibly happy with this purchase, and would recommend this knife to anyone serious about grilling and cooking

Excellent Knife
I needed something to slice larger cuts of meat. I've used it on sous vide roast beef right out of the bag, seared, and rested, and I can slice it so thin, you can see light through it, almost like paper thin deli sliced. I've made some epic beef dip heros. I've also used it to slice up home cured and smoked bacon when I didn't feel like breaking out the meat slicer and cleaning up after it. Perfect slices. I couldn't achieve that with my $400 Henkel knives. The difference between using a chef's knife and this is that you can get one long even slice with this knife as opposed to doing 2-3 with a standard chef knife. You have more control and slice more evenly.It was nice and sharp right out of the box. It lives in its box when not in use. Using the right type of cutting board (endgrain wood. side grain is fine with maple but not as easy on the edge. resin and glass boards will destroy your blade), it'll be a while before I have to sit down and sharpen it. In the meantime, a little edge dressing, here and there, with a steel will keep it in check. Make sure you dry the knife before storing (you should do this with any chef knife after washing).

First use: 12 lb brisket
My daughter bought a 12-lb whole brisket for her dad's birthday. He has only made one before and he has wanted to do a two-day smoke and roast for a long time. So, that explains the gift. He had prepared for weeks ahead of time, watching many YouTube videos for advice and tips to make the perfect one. As I write this, it's in the oven on the lowest setting until lunchtime when the birthday celebration begins. But I knew I didn't have the sharp, brisket-slicing knife the videos showed people using, and I can't afford some of the extremely expensive ones I found, but this one had good reviews and was very reasonably priced and it would get here in time. That's why I chose it. So far, so good. We used it to trim the brisket and remove silver skin and excessive fat chunks, shape it, and the knife performed beautifully. The picture shows the trimmed, dry rubbed brisket smoking on our Traeger pellet grill for 10-hours, yesterday. 🤞 Fingers crossed we will have a delicious lunch. The knife made getting there a little easier due to its sharpness, length, and how easy and comfortable it was to handle... without spending $50-$200.

Great value for the price
Good quality , seems to be rust resistant. Size was enough for a 20lb brisket. It was super super sharp but it was plenty sharp enough to do its job. Maybe I’m use to my kitchen knives that I keep sharpened

Functionally and Aesthetically SHARP!
Razor sharp and glides through chuck roast like it was butter! I am very happy with this purchase, and can't wait to use it on a brisket. BUY IT. I am so pleased with this purchase!
