Q: Why is my camera so flimsy when I removed the cap off the drone?

That's the "gim" part of the F11Gim. It's part of the gimbal design that helps take better pictures. Think of it as sort of a shock absorber; by allowing the camera to move as it does, it can self-level & counter some of the movement of the drone. But you're right, It does make the camera feel incredibly flimsy (I thought I had broken it the first time I took the cap off)

Q: Since there’s no collision avoidance, how successful have you been flying this drone without crashing?

It's such a stable drone once you have gps lock it will stop almost immediately and react as quick as you do on the controls. YOU are its obstacle avoidance as with almost all drones. If you don't feel coordinated enough yet then start with a cheaper drone to learn the feel of them then buy this one to appreciate the difference and picture quality.
