- Fermentation: Harvested early in the morning, the grapes arrive at the cellar at optimum berry temperature The grapes are slow pressed and only free run and lightly pressed juice is collected for this wine Constant reductive conditions are maintained with the use of CO 2 gas to minimize oxygen uptake and loss of flavors Cold fermentation at 10 12 C retain the vibrant flavors of the Sauvignon Blanc grapes
