How do you get it to not make the gross foam?

It is not crema. It's aerated coffee from it spinning the pod really fast. There is no way to brew it without the foam. If you don't like the foam, stir it until it goes away or buy another machine.

Is this a nespresso machine or delonghi? what do they mean nespresso by delonghi? is this a knock off?

Original nespresso made by Delongi, Nespresso company License multiple other companies (about 5 to make their coffee machines).

Are these pods recyclable?? Whats the process?

They are all recyclable no matter where you live. Order (for free) a recycling bag from Nespresso and put your used pods inside. When it is full, drop it off at a UPS store and they will mail it to the company for recycling.

The information book I received states my machine only makes two serving sizes the info above says three. Will the Alto pods work on this machine?
