Fantastic
Slice through a tomato skin or avocado skin so fast you have to be careful. Meat never had a chance. Perfect size. You don't have to sharpen it. Just a super fine hone will keep it perfect. Take care of it and it will last forever.

Great filet knife!
I use Mercer knives in culinary school, as well as for my catering business, and in a professional kitchen. They are great knives for daily use. I use this boning one primarily to trim Boston butts and brisket.

Very sharp
Love this knife it really stays sharp for a while. I butcher my own deer when I get one and I was tired of my knife keep going dull like every five minutes and taking forever to process the deer. I was using cheap knives that wouldn’t hold an edge. Anyhow I don’t have to sharpen this knife nearly as often maybe after each one. When it isn’t hunting season I use it all the time for cutting meats and it always stays very very sharp.

Nice knife.
This is a good knife. Nice handle, sharp blade that holds an edge, easy to clean. I’d recommend this to any household aspiring chef! This is not a professional grade knife but I’d bet that it could hold its own for a while. In my opinion the four best knives to get, in order, are: 10” chef, 12” bread, 7” boning, 3” paring. I’d feel good about recommending this brand.

Arrive today very sharp. The Tang and the handle are in great shape amazing quality control.
I can kick myself in the for selling my 50-year-old boning knife from Germany. Very rarely did it ever need sharpening. I hope this Mercer Renaissance is the same quality this stiff boning knife is very sharp.

Best Knives
I used to buy expensive knives, Wusthof , etc. None of them lasted that well. RENNAISSANCE by Mercer is the best knife for your money. I have their largest Chef knife and this knife. From a minimalist perspective, that is all you will need. I have hidden these 2 knives in and amongst my older set of Wusthof , Henckels, etc. That way, the family doesn't throw them in the dishwasher. This is the best knife for your money. Don't hesitate. - Do not put in dishwasher. Hand rinse and dry and put away.
