The jumbo muffin cups do turn white when pinched. Does this mean my product is defective?

Possibly. I have had mine for a few years now, and I don't have that problem at all.

can these be used with melted chocolate? (as a mold)

I do not have the square silicone cups I have the jumbo round cupcake molds and they work great on muffin mix. they peel off very easy. They bake in the oven with no problem and has not change shape
