Can this santa sliegh be made from a single 4x8 plywood ?

No, the 59" long sleigh WC5 takes 1 and 1/4 sheet of 1/2" thick exterior grade plywood.

looking to build a sled but would like to know which one of the patterns I should order since it is for an adult to sit in

All of our sleigh patterns are designed to be decorative yard displays. If you wish to make modifications to safely support the weight of adults and children, for liability purposes, you will need to add supports under the sleigh.

After it is assembled is it easy to disassemble for storage?

There would be at least 16 screws to take out to take it apart. However, I filled mine with wood putty so I wouldn't see the screw heads and now I'm unable to take it apart. Just heads up so you don't make same mistake.

I used the pattern with 1/2 inch plywood to temporarily transform a pony cart for Christmas. Easy to use transfer. Great instructions on assembly, definitely recommend. It would make a beautiful yard display as well.
