Is the window made of glass or plastic? I want to be able to use in the over as well.

The B-2C, milk thermometer has a plastic dial. I require reading glasses, but with of the glasses I can see the green zone and know that is 150 to 170, so can tell if chicken is done. As well there is a red arrow at the 140 Mark and the boil mark. Using a glass of ice water I can calibrate the dial easily as instructed in various YouTubes

Can you use this submerged in water for sos vide cooking?

This was such a piece of junk I threw it out… I doubt it’s that waterproof though and would look for a thermometer specifically made for sous vide.

While it isn't instant the display lag is very small. It's much more responsive than my first thermometer

Would this work for checking the temperature of salmon?

Thick salmon , yes . it says the tip should be in about 1 to 2 inches for the best reading . thin meat could be a challange . the sensor is in the tip end . temp range 0 F to 220 F hold the dial or clip when measuring . don't let the tip touch a hot dish\tray .
