How do you fix the handle not staying up?

You don't. Mine won't stay up and somehow it got bent when crushing cans, so it's going to be tossed out.

I know it says 16oz, but I mostly drink Bai water, which is 18oz. Anyone know if this will crush those?

Our McKay Can Crusher is best for 16oz and would not recommend it using 18oz. You might need to crumple it a bit so you can use it on 16oz.

Will this crush metal soup cans?

Possibly. I've never tried it though. I do know that it would require a great deal of strength and the can crusher would have to be mounted to something extremely solid in order to do so. If only mounted to the wall as mine is, I could see it tearing loose if used to crush something made of heavier metal, such as soup cans. Again, this is only conjecture on my part, but based on sound principles of physics.
