It is 300 watts, which is 2.5amps at 120 volts.

Can you put half tray size from a caterer in them or do you need to transfer to the trays that come with it?

Yes you can place a half tray on the heating surface. The stainless steel frame and the 3 trays are removable. It can be used as a flat warming tray.

How quickly will this heat up food from a cold state?

In my opinion in 15 to 20 minutes. Obviously it will vary with how much and how cold the food is. It will keep food quite hot quickly if the food is already warm. It works extremely well at our church.
