Does this drone require the user to reconnect the gyro sensors each time the motor stops?

No, but you should recalibrate the gyros once in a while. I have a couple drones/quadcopters and this is one of my favorites. Very easy to fly due to the altitude hold ability.

Is it easy to stabilize like the other models?

My six year old was a pro with about 30 minutes of practice. Super simple.
