Great for beginner cooks like me!
I love the versatility of this book. Hot pot is one of my favorite meals but I have always felt like the broth needed to be meat based for it to taste good. I found the miso broth and wanted to share this meal with some vegan friends. The book walked me through a very thorough step by step process of making the miso broth very rich and flavorful.I ended up using two pots for our meal, one for those that wanted meat and the other for those that didn’t want meat. It was a great meal!

Great for both beginners and more seasoned hot pot folks!
First, I must say, I adore hot pot. I love the comfort that hot potting at home brings. I love having my family gathered around the steaming pot of broth. It is not only a meal, but it is a fun and engaging family activity! It gives me all the cozy feels. With all that said, clearly I am not a beginner and perhaps not the intended audience for this cookbook.Yet I thoroughly have enjoyed this cookbook as much as any beginner. Though I've experienced hot pot since my early twenties, I never learned the origins of it. I really appreciated the author's detailing of the history of hot pot and how it spread throughout the Asian regions. I've also only been familiar with the Chinese style of hot pot at home using a traditional bone broth. This cookbook provides recipes for different broth styles across the different Asian cuisines! One broth I am particularly excited to try is the Cambodian seafood broth! This book is very detailed in how to enjoy hot pot at home. It provides information on all the necessary tools and ingredients needed. With hot pot tools available right here on Amazon and all the amazing online Asian grocery stores these days, hot potting from the comfort of your own home is totally accessible!I do not have the fortune of knowing the author of this cookbook, but I was fortunate to have been provided an advanced copy from the publisher.I feel this cookbook is excellent for those who have always wanted to experience hot pot or those who love exploring new cuisines/cooking techniques. Those not new to hot potting, like myself, will also find this cookbook enjoyable to keep in their collection of cookbooks.

Fix this Korean specialty in your own home
I love Korean food, but hot pots are in some areas hard to come by and the prices charged can be very high. This book will now allow you to fix this specialty in your own home and at a bargain price. Thankfully, even for someone who has hot pots for years, the author does include a sound introduction about which tools and utensils to use and how to select the proper hot pot. Followed by a chapter to list the various food ingredients to consider, then the recipes start. The initial chapter is of course dedicated to broths, the heart of each hot pot and included are dash broths, miso broths as ell as more exotic ones such as creamy coconut broth - one of my favorites. The come sauces as well as snacks to go with the hot pot experience. The book also lists a number of specific hot pots such as a Vietnamese Beef Pho inspired meal or a Taiwanese Shabu-Shabu meal. The variety is great and I encourage the reader to look over the options first before deciding where to start.I received a free copy of the book from the publisher.

So many ideas on how to improve my soup and sauce
I am a huge hotpot at home fan . Thought my soup base and sauce was the best UNTIL I read this book. I love how the author sorts it by broth and sauces, vegetable and tofu hot pots vs meat and seafood hot pots. I love how she lists where I can buy the ingredients. Didn’t know hot pot was common in so many Asian countries . The names of the various versions of hot pots really draw you in to want to immediately try it at home . I’ve never made my own dumplings but now i can and I will with the recipes in the book . I use an electric Faberware skillet when I have hotpot at home . I think I need to get a gas powered hotpot too. Appreciate the differences pointed out on page 6. This book is well written and will hopefully help all new hot pot diners want to do it at home . Great gift if not just for myself !!

Great introduction to Hot Pot cooking!
What a treat! I was fortunate enough to receive an advance copy of this book and I cannot praise it enough. From the plethora of recipes to the stunning photos and attention to detail, anyone with an interest in Hot Pot cooking will not be disappointed. I have long been a fan of hot pot meals, but always at a restaurant and never at home. In fact, I never even considered it was something I could do at home. So from the moment I turned to the first page I could not put this cookbook down until I had read it in its entirety.I quickly learned that the hot pot style of cooking goes far beyond the shabu-shabu style I was most familiar with. It also includes soups and broths from many other asian cultures such as Thai (Tom Yum & Tom Kha), Vietnamese (Pho) and Japanese (Miso Soup). The big difference is the communal aspect of bringing friends and family together at the table to cook their choice of foods in the simmering broth resulting in a delicious soup that everyone made collectively in a social setting. This book contains recipes for several broths and stocks in addition to a myriad of dipping sauces, assorted dumplings and, of course, actual hot pot meals. It also covers the equipment needed as well as information on the types of meats and vegetables you can cook in the simmering broth.I have made the all-purpose chicken broth, a simple yet versatile base that is lightly seasoned with ginger and scallions. I also made the hot and sour Tom Yum broth, a meatless Thai-based combination of galangal, lemongrass and fish sauce elevated with chile paste, tamarind, kaffir lime leaves and lime juice. Both of these were outstanding and provided the perfect foundation for the first two hot pot meals I made, the "Everything-In-One" Hot Pot and the Thai Coconut Curry Hot Pot. I also made a batch of Pork and Shrimp Wontons and a batch of Meat and Vegetable Dumplings which were delicious and flavorful. This book is very well written and goes into much detail regarding the origins of each dish and the components you will need. Thankfully I live in a large metropolitan area where I have easy access to most, if not all of the ingredients. Susan also recommends substitutions when possible. My only concern for home cooks would be the accessibility of some of the ingredients listed in the recipes. While the non-perishable items are easily obtained online, the fresh ingredients may prove challenging depending on where you live. But if you are interested in learning about Hot Pot cooking, you will not be disappointed. This book covers it all. Well done Susan Ng!!
