Only the K3 with low-profile optical switches is hot-swappable. The mechanical switch K3 is not hot-swappable.

does it work on Linux Bluetooth mode? (if not works plugged in?)

Yes it does work both plugged and unplugged (via Bluetooth) currently using it in Fedora 35. It even displays low battery warnings in GNOME shell.

Is this version hot swappable?

Yes, if by hotswappable you mean the ability to switch between Mac and Windows? And swap out keys? Yes to both.
