This stuff is great. Chef article said no cook should be with out it. I strongly agree. 5 0r 6 drops in your dish while cooking is so delicious.

Well Worth the Expense
One needs to know what one is buying. This is not a pricey “substitute” for anchovy paste although the two seek to accomplish the very same thing. UMAMI. I use quality Vietnamese Red Boat when that is appropriate and Sicilian aged sauces when appropriate. This product is superb and I never hesitate to buy it.

Don’t expect the bottle in the picture since that’s not the one you get. Adds tons of flavor to many different recipes

3 problems plus possible contamination. Beware!!!
3 problems: first the new bottles are smaller than the old ones (see picture). The old bottle is on the left. Second and scary: there is a lot of sediment in the bottle after only a month in the refrigerator. The 'colatura di alici' is usually sediment free. Third: when first opened it required 3 times as much to acquire the same flavor profile lending me to believe that it is watered down or enhanced with salt (hence the sediment). I am scared to use it.

How did I get along without it?
Bought this because of a video I saw on how to prepare Spaghetti con la Colatura di Alice on Elizabeth Minchili's blog. Excellent instruction. All you need is colatura, olive oil, parsley, garlic and breadcrumbs. Then watch and follow the video exactly. It is a revelation. Easy, sophisticated and delicious. You will always want this pricey item in your pantry. Its cheaper than fish or steak and once you have the knack you will impress everyone.
