Instant Pot 6-qt Cast Iron Multi-Cooker
So far I like it very much. For sauteing it came up to temp very quickly. For cooking overnight oatmeal on warm (which is a big deal at our house) it came out perfectly. I was afraid we might find a dried out mess in the morning, but no.Controls, very straightforward. The lid has spikes to keep food moist and it is very tight fitting so no steam escapes.One mistake I made and I already threw the packaging out so too bad for me, the "matte black" is an ordinary cast iron, unfinished exterior, best I can tell. The interior of the pot and underside of the lid are enameled, but not the outside so it can't go into the dishwasher in spite of what the manual says. The same system is available with a completely enameled pot. I should have bought that version. It's fine, but sometimes I appreciate the ease of letting the machine do the washing for me.I really appreciate that this cookware doesn't have a nonstick finish, but it's still very easy to cook with and clean.

Would highly recommend! I found this pot because I was disillusioned with the new crock pots. They cook at such a high temperature, even on low, that they can’t be left without the danger of the food drying out and burning. So I bought this pot looking for a crock pot but I love it for everything. Love that you can sear and then slow cook. It’s a beautiful pot and the included silicone handles and mat are great. It is heavy but I’m willing to put up with that because I love everything else about it. When my daughter saw it for the first time, she fell in love with it and I bought her one.

Wow. This is heavy duty very high quality cast iron dutch oven and and the base can do more than I even realized. Love that the dutch oven can also be used on your stove top or in your oven, so you're really buying a nice cast iron dutch oven that comes with an optional programmable base. I don't use this a lot, but when I do, it's perfect! Slow cooking stews and chili and being able to sear/brown the meats and veggies first is a game changer, and no bigger than your average crock pot (although heavier, cast iron is heavy so if you're planning to move this around a lot and have mobility issues, consider the weight of the unit and also working with the dutch oven for cleaning). In fact, I haven't touched my crock pot since I got this. Love it.

My Pros and Cons
I bought this cast iron Dutch oven slow cooker to replace my really, really old West Bend slow cooker. I chose this one to try because it's Teflon-free and seems less likely to crack like ceramic liners are known to do. So far these are my pros and cons for this unit:PROS:-I will still have a useable Dutch oven when the base eventually fails.-The Dutch oven insert is compatible for use on an induction cooktop.-It comes with a handy silicone hot pad and handle covers.-It has open style handles instead of solid making it easier to get a secure grip when lifting the pot out of the base.-No need to season or re-season the interior because of the enamel coating.-It's been rather easy to understand the controls and convert instructions from old recipes. I'm a person who hates complicated technology with functions I'll never use, so this appliance suits me.-The depth and width of the pot works great for whole chickens and smallish or boneless turkey breasts. --The sauté function allows you to brown poultry in the pot first, cook, then make your gravy, and end with simmering a bone broth all in the same pot. I really like that!-There's a keep warm mode that I'm very happy to have, but the pot itself also holds heat well to keep things warm for a while after cooking.-my cake pans fit in it to help press in parchment paper for bread proofing or baking.-Contrary to another popular review, I've been able to adjust the time and temp during cooking by pressing the temp/time light once or twice to toggle between the prior set temp & time and turning the knob to adjust whichever setting is blinking. Or you can just hit cancel and reset everything.CONS:-This is promoted as being dishwasher safe, but then the cleaning instructions recommend hand washing with mild soap to preserve the enamel coating. That's sneaky marketing if you ask me!!-Enamel coatings will also scratch and chip with metal utensils, so tips on the Internet say to use wooden or silicone coated utensils to avoid that kind of wear and tear. Expect to soak rather than abrade cooked-on food .-Some may prefer a light interior enamel, in spite of them tending to stain, instead of the black interior these have. It makes it harder to see how much you've browned darker meats without picking them up out of the pot to look at. Not a problem with browning poultry in my experience and you have to turn meat as it browns anyway, so it doesn't bother me.-The rim of the lid and pot (black) are not enameled and there are reports of issues with rust there on social media, especially if you are determined to clean in a dishwasher. That's prevented by putting a little cooking oil on your finger to oil the edges before and after each use and drying thoroughly after cleaning. This can be a pro because these are the spots where chipping is likely to occur from lifting the lid on or off or banging a spoon on the edge.-While slow cooker liners are supposed to be heat resistant up to 400 degrees F, you shouldn't use them for the sauté function because they are likely to melt and ruin your pot and food. Use only for slow cooking if you must, but be aware that BPA substitutes are not considered safer than BPA. Why get away from Teflon only to expose your food to other chemicals?-It takes up a lot of kitchen real estate....think half of your sink base cabinet or as much as a toaster oven that fits a 10" square pan (my Breville mini). It's weight might make it too much for pull out drawers in cabinets, too.-From the questions answered section:"Q: Can you leave this while at work in slow cooker mode?A: Thanks for your question! Customer safety and satisfaction is our top priority. We don't recommend that you leave the Instant Precision Dutch Oven unattended when in use. Please always be nearby while using this appliance. By Instant Brands Support on December 9, 2021" Really!? Who hangs around their slow-cooker for 6-10 hours? Sounds like a "covering-our-butts" recommendation, but in their defense one has to keep in mind that cooking times in a Dutch oven are likely going to be less than in other kinds of slow cookers. There's likely going to be a need to make adjustments from the times you are used to counting on.-The cord is not detachable from the base. I wish I could put it in the pot when I'm not cooking with it.-It's made in China.All-in-all I am enjoying this slow-cooker. It has versatility that I didn't have with my old West Bend model and it seems relatively well-designed and made. Time will tell if the base has a decent longevity, but electronics are usually the weak spot of any appliance. You don't need this if you already have a slow-cooker you like and have a Dutch oven pot, but if you need to get or replace a slow-cooker, I'd consider this one.
