Are these the kind that Jesus wore?

No, he wore Skecher water sandals. Peter wore Dockers and went under.

How well do they hold up? Can they handle water? Beach?

They can handle water. I don't like getting sandals wet but shortly after I got them I got caught in about three storms. They were soaking wet. After they dried they look and felt just like new.

Has anyone had an good experience with going a 1/2 size down rather than up? I haven't had good luck for going up a size.

Every type of shoe or sandal are a little different as far as size, especially if you are only adjusting by 1/2 size. My suggestion would be to try the 1/2 size down if you want and as you know, they can always be returned if it does not fit you properly.

can the heel strap be opened or is it permanenant

The heel strap can be opened and closed, it is adjustable.
