What is differences/advantages for a variable speed verses a slow speed?

The advantage to having a variable speed is two fold: The slower speed is generally used for sharpening and honing while the higher speed is for removing material faster and buffing/polishing with a polishing wheel or wire wheel. The slower speed creates less friction and therefore less heat while the higher speed (with a grinding wheel) creates more heat.

What is the widest wheel I can mount on the shafts? I want to mount wheels and drums that are 1 1/2" and 2" wide

The 5/8" diameter shaft is 2 1/16" wide if you take off the guard, with the last 3/4" threaded. The flanges that come with it are 15/32" wide (total) and the nut is 27/64". You could squeeze a 1.25" on there and if you got some different flanges and a thinner nut, maybe you could squeeze the 1.5" on. No way on the 2", though.

On the slow speed model, does the tool rest on the left side have a flat option or only the grooved tool rest?

Mine has a grooved tool rest on the left side. I don't know what you mean by Slow Speed Model?
