is the face plate on the mortise lock assembly 7in in length

No, the face plate for the mortise lock assembly is five and a half inches in length. The two back plates for each of the doorknobs and keyholes are seven inches in length.

Is this lock available with the latch reversed, or do I need to switch it myself?

You have to swap it yourself. One screw holds it together and to reverse, you just unscrew it, flip the latch and close it. I had to do this for my bathroom.

Clarifying: setback is the measurement from the front of the plate to the middle of the doorknob / key hole. They are usually 2 1/4, 2 3/8 2 1/2, etc

The setback from the front of the plate to the middle of the doorknob/key hole is 2 3/8 inches.

What are box dimensions? Thickness, Faceplate, Box w/o Faceplate?

Faceplate: 7/8" x 5 1/2". Box: 5/8" x 3" deep x 3 9/16" high.
