Can you wear them sideways in the sheath on the belt?

The sheath is made for vertical carry, but you could rig it up for horizontal carry. I would even feel comfortable carrying upside down such as a neck knife because retention is excellent with the insert.

The tang is full length, but it is a hidden tang, so no, not technically full tang. All stacked leather handles are made that way.

Are these made of decent metal? I want and need the blade to stay sharp for all i use it for. Most importantly are the handles good and sterdy?

They are made from 3Cr13 Stainless Steel. It is a good steel, but will require sharpening with use. They are not to be used to baton, they are sharp knives for cutting meat and such. They are very easy to sharpen.
