which one do you use for rosé?

You can use both for Rosé. White wine usually has more Sulfites so the strength in the White Wine dropper bottle is slightly stronger than the Red

Does this product expire / go bad?

Yes, but we just purchased a bottle and it expires in 6/2022.

Do these drops reduce histamine in wine?

UBfree removes the ‘sulfites’ NOT ‘histamines.’ These are two different things. Histamines are produced in the body, which reacts to the sulfites. If your body reacts to these added sulfites, it will release the histamines - so by using UBfree, it filters the added sulfites out of the wine, then your body will not react and produce the histamines. So if a product says it reduces the histamines, this is misleading as if you reduce the added sulfites, your body will not produce high histamines levels.

On the bottle it says use within 3 months of purchase. Does it mean opening instead?

I would guess from time of opening. I have used this for a couple of years and just use until gone and never have had a problem. It is a form of hydrogen peroxide so can't grow bacteria, etc. Lost of labels are for the FDA and don't mean much in terms of risk, etc.
