Great for Low-Carb Tortillas
This is the only Quesadilla maker I could find on Amazon which would take the 7-inch 3-carb tortillas. All the others would only take the larger tortillas. The added bonus on this machine is that you can use different sizes of tortillas, although only 6 inches will be filled and the outer 1-4 inches will be plain tortilla.We tested the new machine last night. I had leftover turkey from a roast. I chopped up the turkey and followed the directions on quantities of meat/filling to cheese to prevent over-filling. I cheated a little by adding a tad more in my first attempt, because the low-carb tortillas are very thin. So, after heating the unit and assembling the 1/4+ cup of chopped turkey and 1/2+ cup of shredded Monterey Jack, I had to hold the lid closed about a minute until the cheese started to melt. Then the latch engaged. (Maybe I could have forced it closed, but I try to be gentle with my appliances.) The finished Quesidillas were marvellous!I repeated the process for my husband, who is not on a low-carb diet, so I used the 8" flour tortillas. Same process, but I stuck to the recommended ratios. I still had to hold the lid closed for a minute until the cheese started to melt and then the latch engaged. Again, perfect Quesadillas. The finished "pie" was pressed into 6 triangles, but not cut through. I had my handy-dandy pizza cutter ready. Served with sour cream for a fast, delicious dinner made from leftovers. My dinner was only 9 carbs which included 1 tablespoon of sour cream. Calorie count (using the low-carb tortillas) is 355 and WW points are 8.The Hamilton Beach Quesadilla maker did just what it claimed it would do. I did not experience any sticking, even when I forgot to put the second tortilla in place before closing the lid. The melted gook on the top wiped off quickly with a damp micro-cloth. Also, there is an over-flow lip around the outside that caught the oozing oil and melted cheese, which also cleaned up fast.One tip when making these - the melted cheese cooled and hardened very quickly. I think it did not help to use cold turkey in the filling. I would recommend heating whatever filling you plan to use with the cheese to keep the Quesadillas hot longer.Tip to Dieters: when on any kind of diet, you must cook! Whipping out a few dozen Quesadillas and storing them really helps to avoid cheating. I think these would reheat in a toaster oven beautifully.This is now one of my all-time-favorite appliances. I hope it lasts a long time, but for the price, if I get a year out of it, I will be thrilled. Get this machine, use your imagination and have fun!

Makes quesadillas
Got this first as a gift and was rather unimpressed with the whole idea until I actually started using it. What a great way to make quick food items for the kids, use up leftovers, or just make a fast snack. Works with almost any type of filling as long as you don't go overboard and keep the lid from being able to close. If you are using thick filling items (diced chicken for example) you may need to use some muscle strength to force the lid closed enough to engage the lock. I have not had any problems getting the interior contents hot before the shell burns so that's good. But the shells do get more crunchy than say a fast food quesadilla.The interior design has ribs that press down on the shells and make sealed triangle pockets but they aren't long enough or sharp enough to actually cut the quesadilla for you. Most of the time you can break or tear the triangles apart but sometimes you need to use a knife and cut them if you actually want them separated. The inside is also non-stick but everything that leaks out of mine promptly burns onto it and usually sticks. Because you can't submerge the maker in water cleaning can be a chore if you've gotten it really messy.This will make quesadillas using pre-coooked or raw shells and the only limit to the type of quesadilla is your own imagination and how how much stuff you can feasibly stuff into it and still seal the lid. When the one I was gifted broke after two years I promptly went out and bought another I liked it so much.

THE BEST PURCHASE!
The best purchase we've made in a while....and the most used. The easiest dinners, so yummy! We cook up some crock pot salsa verde chicken (on pinterest) on Sunday and throw it in the quesadilla's through the week! The cooking trick to a PERFECT quesadilla every time (which I found in one of the comments here) is to 1) use cooking spray first, 2) keep the cheese toward the middle of the quesadilla (spread to the size of an average smaller pancake), 3) don't use too much cheese, 4) just set the lid on the quesadilla to cook for 1 minute, 5) then LATCH the lid and cook for another 1.5 minutes. Perfect quesadilla every single time! A few final tips: 1) the cooked flour tortilla's at Costco (near the bread) are the perfect 8 inch size and come in bulk for parties, 2) the white quesadilla cheese in the red bag or the mixed Mexican blend cheese both in bulk at Costco are perfect for use in this, 3) sprinkle in a little Trader Joe's chili lime seasoning inside the Quesadilla (also with the shredded salsa verde chicken) for the tastiest quesadilla ever! Dip in sour cream, salsa or quac for the easiest, yummiest, kid friendly summer dinner!

Nice quick maker of quesadillas if you don't like usually overstuffed ones
The quesadillas this makes come out crisp on the outside in nice segments to cut up, and relatively quickly. I find it's easier to clean up after this then going through all the rigmarole with a frying pan. however if you're a big fan of quesadillas that are 3 in thick with contents, this is not the tool for you as the stuff will squeeze out the side and drool all over the counter. It's well-made, cleans up easily. However it does have an issue that is all too common with small appliances, which is no place to coil and store the cord which drapes all over the place when you put it away.
