Q: How long have you owed the mats before the color came off? Any cons on the set?

I have owned the Seville Classics Bamboo cutting board and mats for about 5 years. The color never came off the mats, but they did get cut up pretty badly after about 3 years, so I replaced them (just the mats) with a new set which I found online. You can put the mats in the dishwasher or wash them by hand, and the bamboo looks almost new. I love this item and it's the only cutting board I use now.

Q: Can this board be stood up on it's "edge" on the counter top (to store until needed)?

Yes, it can. It will stand alone without propping against anything. I really like this board more than any others because all of the plastic sheets fit inside and are there for any cutting needs.

Q: Amazon offers to buy this board with 3 or 7 mats. Can anyone tell me if the board is the same in both cases? The dimensions seems to vary

I'm not certain if the same I have the 7 mats I believe it is 13X16 or near that

Q: I see the board has a rim of exposed wood around the mat. Does the wood seem to get dirty when cutting meats, fruits, etc.?

The rim can get dirty depending on the amounts being cut and how juicy, but I've never had a difficult time removing the other mats to quickly clean the wood block.
