I want to connect dual 120watt speakers. is 24v 5A enough? is 24v 10A too much?

This amp is rated at 100W+100W=200W. The datasheet says 90% efficiency. That means you need 9.25A at 24V (200/.09/24V) to generate the power needed for 200W. A 24V 5A supply can supply 120W, times the 0.9 efficiency, that supply will only give you 108W or 54 W per channel.

Can I use a 7.5a fuse or will it fry the amp? (I have a classic car with a 7.5a glass fuse with wiring for a radio that I'd like to use.)

The unit takes 12-24 volts DC. The amperage does not matter, you can use a 200a glass fuse if you like :)

does this come with a power cord / pig tail, so I can wire it into a dc power supply? If not what size plug do I need?

You will need to provide your own power source and it fits a 5.5mm plug. Above 12V is recommended, and 24V will give you full power.
