It’s a darker chocolate - higher percentage, also different flavor accents.

This is just chocolate, there is no presence of any grain, so should be no gluten. However, maybe it’s manufactured where such si stance can be present - I don’t know. While it’s not a clear answer, I hope it helps you.

how long can you keep it fresh?

This is a great question! I have been writing about chocolate for over 15 years, and I also temper at home. One thing I’ve discovered is that you can keep high cocoa content dark chocolate for years. I even have some Italian dark milk chocolate that’s 56%, not even really dark, and it is kept impeccably well for over 10 years. In my experience, the only chocolate you don’t want to keep for a long time is anything with nuts as they go rancid.
