Q: i want to keep burritos warm will this be good?

Yes. We have prepared dishes that sit warm in it till needed on steamtable. Works good. Nice to be able to see what is in it because of glass.

Q: We need access to both the front and the back of the warmer. Are there doors on both the front and the back?

No there is only doors on one side. We can custom make it with doors on both sides for another $30.

Q: Does it fit a 9 by 12 pan? And how?

This unit has 2 shelves. You can fit at least two 9 x12 pans on each shelve. They will fit both ways, either length or witdth. The shelve is 26.5" wide x 14.5" deep.
