Is it possible to connect the two 12V fans in series and use them on a 24V circuit?

I don't know why you couldn't. There is another route, a DC-DC converter such as this https://www.amazon.com/LM2596-Converter-3-0-40V-1-5-35V-Supply/dp/B08NV3JCBC/ref=sr_1_10?crid=3C75NN20WP7SA&keywords=dc-dc%2Bconverter&qid=1681221011&sprefix=dc-%2Caps%2C208&sr=8-10&th=1 which would allow you to use 1 or 3 fans.

Would this work as a replacement for the ender 3 v2. the v2 not the original ender 3?

I had them on my v2. They worked for about 2 prints then the poop soldering job form the factory killed the fans. Avoid these.
