I'm looking for this pressure cooker and now I've narrowed down my search between this Hawkings and the T-fal P2510737. Which one is the best?

The Hawkins is the best, by far. It is cheaper and easier to maintain because all parts are available for it. You could build a new one from scratch if you wanted to. The closure is much gentler on the gasket, so the gasket lasts longer. The gasket is a simple rubber ring that costs less than $5 to replace. The gasket is protected from the pressure cooker's contents by a lip around the lid. If you were desperate, you could probably substitute a greased-up leather shoelace for the gasket, because the design is so simple (although that would probably be dangerous to do in reality). Most modern pressure cookers are very safe, but their closure and locking mechanism is complicated and relatively fragile. Pressure cookers that were dropped hard on the floor have resulted in fatalities. The Hawkins design makes it physically impossible for the lid to come out of the pressure cooker, even if it is damaged.The Hawkins safety features are very reliable, and they will continue to function even if the pressure cooker is damaged. For example, the emergency pressure release valve will open by physically melting if it gets too hot, or it will blow out mechanically if the pressure is too high. Although the safety valve must be replaced if that happens, its design is so simple that you can trust it to always work, a bonus is that they are so cheap you can buy several to keep around in case they are needed.The Hawkins design has been in continuous production since the 1950's, so you never have to worry about the availability of parts. Other companies change models every year, so you are forced to buy a new pressure cooker when it needs minor maintenance. For the safety, reliability, maintainability, and low total cost of ownership, the Hawkins beats every other pressure cooker ever made. There are few that come close to the Hawkins, but none of them were able to surpass the Hawkins, and most of them have been discontinued anyway. The Hawkins always wins on nearly every point.
