Is this game different enough from Resistance to merit buying both?

Coup is a better "opener". It's more accessible, less complicated, fewer pieces, takes less time, and works better either for the first game of the night, or for introducing to non-gamers. The Resistance is more of a second game, when everyone is settled.

Is this fun to play with only two players?

Coup is fun with 3. Best with 4 or 5, and still not bad with 6 even though the best says up to 5 players. You could still have a great time with 3, but you probably will miss out on some of the deeper strategies that were intended for the game.

How is "Coup" pronounced? Is it pronounced like 'coo', or 'coop'?

It is pronounced 'coo' and you will be corrected if said the other way by experienced players like I have been on several occasions.
