Is knife suitable for fine chopping of vegetables and nuts?

Yes. This knife is amazing! I use the big one (this one) to cut potatoes for french fries, larger fruit such as watermelon, and squash of course. I personally have three of these knives, paring, smaller vegetables, and then of course this one. I have gotten rid of all others. I am an at home chef who cooks and bakes daily. I need the best and these are! Plus, I have very small hands, which was the original reason for getting these. The grip on theses is perfect for both genders but especially great for women with small hands. I could not survive the grueling chopping and cutting without this one and my others. Hope this helps.

Does it come with knife guard

I have purchased three and all came with blade guard

It’s the same as a granton edge (scallops on the side help prevent food sticking to the blade), and is part of the Duo-Glide product line.

Should the Dexter Duo Glide knives be sharpened at 15° or 20°?

It appears to be 15 degrees. Excellent knife.

This ergonomic chef's knife is the bomb! It makes chopping and cutting veggies so easy. The ergonomic design saves your hand when chopping or cutting hard, big items, like squash or rutabaga or turnips, etc. Pricey, but so worth it for such a high quality knife. HIGHLY RECOMMEND!
