Would this be good for catching a Scottish Blackface sheep?

Yes, I'm sure this will do for any breed of sheep or goat. I have katahdins and the neck hook is best for catching younger sheep and lambs. I found that the leg hook is better suited for the adults.

Any chance the leg hook would work on pigs?

It likely would not work on pigs. Their legs straighten out when running and it would likely slide off.

Can you use it for other animals?

You could use it on similar sized or smaller animals, but wouldn't recommend it for larger animals
