No, they are not edible. To the best of my knowledge, the only leaf that is edible is 24k gold.

what are these made of and will they tarnish it not sealed?

I don't know what they are made of but I have had no issue with tarnishing with any of the colors in my artwork which is sitting out exposed. Hope that helps
