It is a brilliant device for fermenting almost everything.
I bought it after Kenji Lopez-Alt recommended it in his book on the Wok. I've been fermenting using different glass bottles and valves for a while. I never liked the fiddling around to keep bits from coming up and landing with white yeast if I sampled my stuff along the way. My wife hates the smell of Kimchi, so I burp my container outside. I've fermented many vegetables and kimchis in it with superb results. Without hesitation, I will state that I believe it is the best device I have. Fido bottles that I use for fermentation are a great choice. They are easy to clean, can be stored in the fridge and microwave, and have no complicated parts. I can easily put them in the dishwasher without worrying about them hitting the rotor. There’s no need to fiddle with valves or deal with excess water—you can use less liquid, which prevents yeast or mold from forming. What more could a fermenter want? Two years later, I still believe these are the best methods for fermenting most things. Beware fragile

Für mich ein must have für Kimchi. Ich stelle Kimchi selbst her und seitdem ich dieses Teil verwende, fermentiert es sehr gut, es schimmelt nichts und es läuft auch nichts über. Nicht sehr günstig in der Anschaffung aber jeden Cent wert.

Amazing kimchi container!
I have this and a larger version of this, but this size is perfect for keeping in the fridge without taking up and entire shelf, and makes incredibly good kimchi and can go straight from starting ferment to fridge without having to do anything. Keeps smells in and kimchi crisp and tasty, and doesn’t let it ripen too fast! Really great container, I definitely want more of this size for smaller batches of pickled turnip, carrot, whatever. It fits a small Napa cabbage in quarters, or a half a larger one with the large leaves chopped.
