How does this work over an adjustable bed???

It fits over my standard Queen bed. You would need to have measurements of your adjustable bed, compare to the over the bed desk info from seller and take note if your bed reclines and bends in the middle I don’t think it will have enough clearance underneath for that type of bed.

How do you tighten castors they are loose and allow table to tilt

I gorilla glued the plastic holders of the castors to the legs. Make sure the glue is for plastic and metal. I haven't had an issue since. Gorilla Super Glue Gel, 20 Gram

Do you have to attach top back splash panel or can you use it as a flat table as well? Ty

You don't have too, but if you don't attach it, the table won't be as sturdy. Trust me, you want that "backsplash" attached.

How does it roll on carpet? Does it come in white?

It depends on the kind of carpet. Mine is a little shaggy and it does not roll well.
