I know you said this case holds one disc, but will it hold more than one probably two or three and still close

I never thought about it. I just tried it and it will hold one more and close. I am not sure how secure it will stay.

Can you put a label on the side?

Yes. As normally done, (if you are printing the covers with software) the black shell gets removed, the back card gets put in with both edges bent up to form the sides. The shell gets put back in. To get the sides to form a nice 45 degree angle, I use a razor to lightly score the creases. They will then fold easily. If you plan to just stick a label on the outside, these cases are wide enough to do that too.

After the black tray is removed, is the inside of the back smooth or does it still have the middle grip for the cd?

What kind of plastic is this made out of (polystyrene, polypropylene, etc.)? Is it archival-safe?

appears to be polystyrene. these cases are a slightly lighter version of the kind that come with audio cd's. i don't know the standards of "archival quality" but these make no such claim nor do they appear to have any enhanced features that would make them qualified for archival purposes.
