WALKERSWOODJamaican Mild Jerk Seasoning 10oz Pack of 2

I had an Jamaican neighbor once and she would invite me to some of her parties in which she cooked all the Jamaican foods to serve to her guests which included jerk chicken, the goat dish, and the ox tail dish. I can't remember the real names for those other dishes . Anyhow I love the taste of the foods. She is the one that told me to use this Walkerswood brand to make Jerk chicken, that this was the best brand out there for jerk seasoning. At a speciality Caribbean store I did find and use the regular version and it is hot, really hot. Our family like spicy but now that I found this mild version we like this much better. I can put more on for better jerk favor and it is still pretty spicy. I would call this more medium heat and it probably may be even still too spicy for people who don't like very spicy foods. I don't think it said on the jar but I read somewhere else to use 1-2 tablespoon per pound of chicken and that does work very well and let it marinate over night/24 hrs for best favor. I also cooked some right away without letting it marinate and it tasted good too but if you let it marinate overnight it did have better favor throughout the chicken. I found this guideline someone recommended for cooking on a gas grill with a thermometer but changed it a little and it really worked well for me, chicken is cooked done, still juicy, great browning, and not burnt. I have used this cooking method for drumsticks but it should also be good for wings and other chicken parts just add or reduce the cook time some to match the different size pieces. Preheat the gas grill on high, then put the chicken on and immediately turn the heat down to low and close the cover. Let the temperature drop down and adjust the knobs as necessary to try to keep the grill around 325-350 F for the remainder of the cook time. On my grill that is low-medium setting. Flip the chicken every 15 minutes and cook for a total time of 45 minutes. Turns out well done as you need to cook chicken, but also nicely brown without burning and still juicy inside.

I love jerk chicken. When we had the chance to go to Jamaica to celebrate a friends anniversary, we jumped on it. The resort we stayed at had a "jerk hut" that made jerk chicken every day for lunch and it was awesome.When we went to the gift shop to get some jerk sauce, I asked the 2 women who worked there which of the multitude (they REALLY had a LOT of brands!) of sauces was best, they pointed out this brand and said it was the one they BOTH used to cook at home. You can't get a better recommendation then right from the mouth of the locals!Unfortunately, due to airline rules, I couldn't purchase the jars there as we were just using carry on luggage and the TSA would have taken it from us. Amazon to the rescue....and at a BETTER price too!This sauce is great and, while I like mine spicier, the fiance does NOT do well with heat! This is a great compromise and you won't be disappointed!

I LOVE SPICY FOOD! Moderately spicy... not suicidal. I am also very well acquainted with the spice-levels and tastes of Caribbean food, particularly Jamaican food, as well as other spicy cuisines like Ethiopian, Nigerian, Peruvian, Indian, Thai. I enjoy it very much in moderation - which is why I purchased this MILD jerk paste.But this right here? My eyes, nose, throat, ears, stomach, intestines etc. burned. My whole face was watering uncontrollably. I checked the package again - yes, I ordered MILD.It had me sleepless and doubled over in pain all night. Looking for Pepto-Bismal in the middle of the night at a 24-hour pharmacy after nothing else worked.I wasted a whole pot of ingredients in a recipe I could not eat due to the jerk paste being way too spicy. Couldn't taste anything over the intense sensation of the spice anyway. No one in my house could tolerate the heat.The next day, my mouth had already started breaking out in ulcers. I will not use the second jar.So, order at your own risk.
